Recipe Book: Vegan Cauliflower Cheese

At Health is Wealth Group HQ we love cauliflower cheese and knowing that even though some of us can’t eat dairy, we can still have it with this dairy free recipe, makes us very happy! You can always add some roasted squash to this dish if you want to add in another vegetable.


  • ½  head cauliflower, outer leaves taken off & rinsed and broken into florets.
  • 65g of cashews soaked 3-8 hours (or overnight)
  • 1 onion, diced
  • 2 tbs nutritional yeast
  • 2 cloves garlic, minced
  • 5 tbsp water
  • ½ tsp turmeric
  • ½ vegetable stock cube
  • Sea salt for seasoning
  • 1 tbsp coconut oil
  • 1 tbsp extra virgin olive oil


  • Steam the cauliflower for approximately 10 minutes or until tender but not soft.

  • Fry the onion and garlic in the coconut oil until softened, crumble in the stock cube and add the water to dissolve it.

  • Add the salt & turmeric and simmer on a low heat.

  • Blend the cashew nuts, adding the onion mixture once cooled.   

  • Add the yeast, olive oil and blend until creamy.   

  • Put the cauliflower in an ovenproof dish and cover with sauce and grill until slightly golden.   Serve while hot.
